Courgettes 1 (or half)
Broccoli 350g
Green beans 175g
Peas 175g
Garlic 2 cloves Crushed
Coconut milk 350ml
Vegetable stock 250ml
White onions 1 medium Chopped
Ginger 2 tbsp Grated
Cumin 2 tsp
Turmeric 1/2 tsp
Corriander 1/2 tsp
Green chillies 1 or 2 Chopped and deseeded
Vegetable oil
Salt

Produces: 4 servings (requires accompaniment such as rice)

Variations

The vegetables in this dish can easily be substituted. E.g. Bok choy, aubergine, etc.

Instructions

  1. Add the onion to a pan with 2 tablespoons of vegetable oil. Cook on a medium-high heat for 3 minutes.
  2. Stir in the ginger, garlic, chillies, and spices. Cook for a further minute.
  3. Add the broccoli, beans, peas, courgette, coconut milk, and stock. Bring to the boil, then cover and simmer for around 6 minutes.
  4. Season with salt and stir in the coriander. If using, add the spinach now. Serve once the spinach has wilted.
