Variations

Traditionally of course the kind of pasta to use is macaroni, however this recipe works just as well with any variety of pasta. Even spaghetti is worth trying.

To get an extra cripsy crust, you may want to use breadcumbs in addition to a layer of cheese.

Instructions

  1. Start boiling some water, and add the pasta to it when ready. In the meantime prepare the sauce as follows.
  2. Grate the vegan cheese and put it in a blender together with the stock, milk, and cashews. Blend until smooth.
  3. When the pasta is ready drain it, add the sauce and mix well. Add the paprika at this stage.
  4. Transfer the mixture to a baking dish. To create a crust, sprinkle on a layer of vegan cheese, and breadcumbs if using.
  5. Bake the mixture for 40 minutes and serve when done.
