White onions 1 small Diced
Red wine vinegar 100ml
Sugar 2 tsp
Dijon mustard 1 tbsp

Variations

The salad could be pea shoots, watercress, or a mixed leaf salad.

Instructions

  1. Roast the peppers whole in the oven. Once ready, deseed and cut into strips.
  2. Place the tomatoes in a bowl with the peppers, salad and croutons.
  3. Make the dressing by mixing together the onion, vinegar, sugar, mustard.
  4. Mix everything well and garnish with basil before serving.
