Instructions
Place the aubergine in a collinder with the salt and mix well with your hands. Leave to stand for 30 minutes.
Rinse the salt off the aubergine thoroughly then pat the aubergine dry with a cloth.
Fry the aubergine in a generous amount of olive oil for around 10 minutes. Top up with olive oil as necessary.
Add the chopped tomatoes and oregano to the pan.
While the sauce reduces heat a pot of water to boiling, then cook the pasta until al dente. Drain the pasta and serve.
