Instructions

  1. Place the aubergine in a collinder with the salt and mix well with your hands. Leave to stand for 30 minutes.
  2. Rinse the salt off the aubergine thoroughly then pat the aubergine dry with a cloth.
  3. Fry the aubergine in a generous amount of olive oil for around 10 minutes. Top up with olive oil as necessary.
  4. Add the chopped tomatoes and oregano to the pan.
  5. While the sauce reduces heat a pot of water to boiling, then cook the pasta until al dente. Drain the pasta and serve.
