Instructions

  1. Add the onion to a pan with some oil on a medium-low heat. Cook for a few minutes for a lighter taste, or until the onion caramelises for something richer.
  2. When the onion is ready add the potatoes, chillis, vegetables, and curry powder / curry spices. Stir well on a low heat until the spices are toasted.
  3. Add the coconut milk, chopped tomatoes, and soy sauce. Leave to simmer until the desired consistency is reached.
