Add whichever herbs you like. Favourites include rosemary, parsley, and thyme.
Instructions
Pre-heat the oven to 200°C.
Place the potatoes in a pot and just cover them with water. Add some salt, cover, and bring to the boil.
Boil the potatoes until cooked. (Around 15 minutes – should slide off if pierced with a knife.)
Drain the potatoes in a colander and cover with a kitchen towel. Leave to steam dry for 10 minutes.
In the meantime, put vegetable oil in a roasting tin and heat in the oven.
Once the potatoes are ready, chop them into chunks (if required), and place them in the roasting tin. Shake them around but do not worry about turning them. If using herbs, add them now.
Put the potatoes in the oven to roast for 20 minutes.
Turn the potatoes over and roast for a further 20–30 minutes.
